How could they forget about 89.8 million Americans?

Sad, yet true. According to the United States Census Bureau, 89.8 million Americans are single or unmarried. That's 41% of the adult population!

Go to your favorite bookstore or library and chances are you won't find many cookbooks with recipes for one person. You'll find everything from vegan to meat cookbooks, but authors and publishers forgot all about cooking for one person.

Sometimes it is difficult to halve or even quarter a standard recipe that you clipped out of a magazine or was passed down to you by grandma. The ratios, flavorings, size of ingredients, and other factors create such a challenge for you, a person who wants a good, home-cooked meal. Therefore, recipes for one are uniquely special.

- They are designed for a well-stocked, simple pantry so a meal's preparation is at arm's reach.

- Recipes for one are inheritantly quicker than a meal for a whole family simply because there is less food to cook.

- You season as you wish to please your own tastebuds.

- They utilize 'overlapping' ingredients, foods that are used for other purposes.
