Sweet and Tangy Coleslaw


This coleslaw (or just slaw) recipe for one person skips over the mayonnaise and is infused with a sweet and tangy punch of flavor without becoming soggy with dressing. 

Ingredients needed:

  • 1 1/2 cups coleslaw mix (You can buy a bag of this pre-shredded cabbage mix in the produce section of the supermarket. This may be more practical than buying a whole head of cabbage for just yourself. If you're worried about what to do with the rest, see the tips below.)
  • 1 tablespoon vegetable oil
  • 3 teaspoons sugar
  • 3 teaspoons white vinegar
  • 1 teaspoon Dijon mustard (or yellow mustard)
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • Optional: 1 1/2 tablespoons finely minced celery OR 1/2 teaspoon celery seed

 

Equipment needed:

  • measuring spoons and cups
  •  medium bowl
  • small saucepan
  • spoon
  • large fork

 

How to make it:

1. Place the coleslaw mix in the bowl.

2. Put the rest of the ingredients EXCEPT for the optional celery or celery seed in the saucepan. Stir well to combine everything.

3. Heat the saucepan on medium-low heat until it just begins to boil. This will become the dressing. Allow the dressing to cool to room temperature. 

4. Pour the dressing over the coleslaw mix and toss it well with a fork to ensure the dressing coats everything. Do not add the dressing if it is hot or warm.

5. Add the optional celery/celery seed if you are using it.

6. Chill before eating.

 

What to do with the rest?

Because coleslaw mix is mostly cabbage, it will keep well if the bag is well sealed and stored in the crisper drawer of your refrigerator.  If you're not sure what to do with the rest of the coleslaw mix, here some ideas.

Sprinkle some on top of your next leafy green salad. It will bring extra texture and color to it.

Because it is shredded, the cabbage will behave well and fit nicely into a wrap sandwich and give your bites a vitamin C-packed crunch.

Bok choy, an Asian cabbage is often used in veggie-based stir fries. Substitute your shredded cabbage into your next stir fry. Make your stir fry as you like and during the last minute or so, add some of the coleslaw mix. The shredded cabbage has lots of surface area to be exposed to the heat, so it will cook in a blink of an eye.
